  • 1 cup cashew nuts/ kaju unsalted
  • ½ cup sugar
  • ¼ cup water
  • ¼ teaspoon cardamom powder
  • silver edible foil (optional) for decoration
  1. Grind the cashew nuts/ kaju into mixer till you achieve a fine powder. Avoid over-processing to prevent the nuts from releasing oil.

  2. In a seperate pan, combine sugar and water. Heat the mixture over medium heat to create a sugar syrup. Stir until the sugar dissolves completely.

  3. Add the cashew/kaju powder to the sugar syrup and mix well. Cook over low heat, stirring continuously to avoid lumps.

  4. cook the mixture until it thickness and starts leaving the sides of the pan. This should take around 8-10 minutes.

  5. Add the cardamom powder and incorporate it into the mixture.

  6. Transfer the mixture to a greased plate or tray and let it cool slightly.

  7. once it's cool enough to handle, knead the mixture to form a smooth dough.

  8. Roll out the dough into a thin layer using a rolling pin

  9. cut the rolled dough into diamond or square shapes.

  10. Optionally, decorate each piece with a small piece of silver edible foil.

  11. Allow to cool completely before serving. It will firm up as it cools.
