Ingredients:

– 2 cups mixed vegetables (potatoes, cauliflower, peas, carrots), boiled and mashed
– 2 medium onions, finely chopped
– 1 capsicum, finely chopped
– 3 tomatoes, finely chopped
– 4-5 cloves of garlic, minced
– 1-inch piece of ginger, minced
– 2-3 green chilies, finely chopped
– 1 teaspoon cumin seeds
– 1 teaspoon red chili powder
– 1 teaspoon pav bhaji masala
– 1/2 teaspoon turmeric powder
– Salt to taste
– Butter or oil for cooking
– Pav (soft bread rolls)
– Chopped coriander leaves and lemon wedges for garnishing

Instructions:

1. Heat oil or butter in a pan. Add cumin seeds and let them splutter.
2. Add chopped onions and sauté until they turn golden brown.
3. Add minced garlic, ginger, and green chilies. Sauté for a minute.
4. Add chopped tomatoes and cook until they turn soft and mushy.
5. Add red chili powder, turmeric powder, pav bhaji masala, and salt. Mix well.
6. Add the boiled and mashed vegetables. Mix everything thoroughly.
7. Add a little water if needed to adjust the consistency. Let it simmer for 10-15 minutes, stirring occasionally.
8. Using a potato masher, mash the mixture until it reaches the desired consistency. You can leave it slightly chunky.
9. In a separate pan, heat some butter and lightly toast the pav (bread rolls) until they turn golden brown.
10. Serve the pav bhaji hot, garnished with chopped coriander leaves and lemon wedges, along with the toasted pav.
